Ingredients

For the Dough

  • 150 ml lukewarm milk
  • 70 ml lukewarm water
  • 7 g instant yeast (1 tbsp)
  • 12 g honey
  • 400 g flour (all-purpose or bread flour)
  • 7 g salt (1 tsp)
  • 30 g unsalted butter

For the Chicken Filling

  • 25 ml olive oil
  • 425 g chicken thighs
  • 2 g cayenne powder (⅔ tsp)
  • 2 g black pepper (⅔ tsp)
  • 3 g onion powder (1 tsp)
  • 2 g garlic powder (⅔ tsp)
  • 75 ml water
  • 5 g cornstarch
  • 10 g soy sauce
  • 15 g ketjap manis (sweet soy sauce)
  • 25 g sweet chili sauce
  • 125 g grated cheese
  • 100 g spring onion

For Serving

  • Extra cheese (cheddar slices or grated)

Instructions

  1. Mix the lukewarm milk, lukewarm water, yeast, and honey in a large bowl. Let it sit for 5 minutes.
  2. Add the flour, salt, and butter. Knead the dough for 10–12 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in size.
  3. Heat olive oil in a pan over medium heat. Add chicken, cayenne, black pepper, onion powder, and garlic powder. Cook 5–6 minutes.
  4. Mix water and cornstarch in a small bowl. Add soy sauce, ketjap manis, sweet chili sauce, and cornstarch mix to chicken. Simmer 5 minutes.
  5. Add grated cheese and stir until melted. Mix in spring onion. Let filling cool.
  6. Punch down dough, divide into 10 pieces (about 65 g each), and shape into balls.
  7. Roll one ball flat, place a slice of cheese + 60 g chicken filling, fold and seal edges well.
  8. Place buns on a parchment-lined tray, cover, and let rise 30 minutes.
  9. Heat oil (175 °C / 350 °F) about 2 cm deep in a frying pan. Fry buns until golden brown on both sides.
  10. Drain on paper towels. Serve warm with extra cheddar cheese.
